Fairway Market's Skirt Steak Sliders

For 12 skirt steak sliders you will need:
1.5lb Marinated BBQ skirt steak (herb marinated grilled, finished off in oven with fairway BBQ sauce and Teriyaki glaze) probably close to 2 lb before cleaned and cooked
1/3lb sliced cheddar cheese
1/4lb caramelized onion
almost a 1/4 lb Mesculin greens
1/2 cup horseradish sauce
12 baby brioche
Herb Marinade:
1 tbsp oregano
1 tbsp thyme
1 tbsprosemary
2 tsp garlic
1 tsp shallots
1 tsp salt
1/4 tsp pepper
2 tsp dijon mustard
Horseradish Sauce:
1/2 cup mayo
1/2 cup sour cream
1/4 cup horseradish
1 tsp tobasco
1 tbsp salt
1 tsp white pepper
To Assemble:
Marinate lean skirt steak in herb marinade
Grill meat, then remove and add BBQ and teriyaki finish in oven to achieve crispy
Slice steak thin and set aside
Open up all brioche and rub with horseradish cream top and bottom
Layer meat first (.10 lb for each portion), then cheese (.02 lb for each portion), then onions (.015 lb for each), then mesclun (.012 lb for each).
Cover with top portion of bread and stick with a tooth pick
