Fairway Market's Crab Cakes

1lb Lump Crab Meat
3 Egg Yolks
1/2 Bunch of Parsley
1/4 Cup of Bread Crumbs
2 Pinches of Cayenne Pepper
1. Go through the crabmeat to remove shells, if any.
2. Mix 3 yolks, with the mustard, mayo, and the cayenne pepper. Gently blend the mayo mix with the crab meat. Add the parsley and the minced scallions. Dust with as few bread crumbs as you need, just to hold the crab cake together.
3. Heat a heavy pan on top of stove w one tablespoon of corn oil to medium heat.
4. Place the crab cake in the pan, and gently brown on one side, then flip and place in oven at 375 degrees or 15 minutes.
