Fairway's Barbecue

BBQ Sauce

INGREDIENTS:
3 red onions (Chopped)
1/2 teaspoon garlic
Corn oil for sautéing
16 Oz can Italian whole peeled plum tomatoes
1 cup of ketchup
2 tablespoons dark brown sugar
2 tablespoons red wine vinegar
1 cinnamon stick
1 teaspoon Dijon mustard
1 teaspoon honey
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon powdered ginger
1 teaspoon dark chili powder
1 teaspoon mesquite BBQ powder
1 teaspoon ancho chili powder
1 teaspoon chipotle chili powder
1 teaspoon jalapeno chili powder
1 teaspoon pasilla chili powder

DIRECTIONS:
Sauté onions and garlic in corn oil for 20 minutes. Add whole peeled plum tomatoes, mustard, ketchup, all of the spices, the red wine vinegar, honey, brown sugar and cinnamon.
Cook for about two hours.

Barbecue Ribs
Serves 4

INGREDIENTS:
2 1/2 racks baby back ribs
bbq sauce to taste
salt to taste
pepper to taste

DIRECTIONS:
Season the ribs with salt and pepper the day before you cook them.
 
Heat your grill to medium and place your ribs on the sides of the grill. Grill for 20 minutes, flip the ribs over and grill for 20 more minutes. Remove the ribs from the grill and place on a sheet pan.  Brush bbq sauce on both sides of the ribs. Place your ribs in a preheated 300 degree oven and cook for 35 minutes. Remove the pan from the oven and brush the meat side of the ribs with bbq sauce. Place back in the oven and cook for 10-15 more minutes. Place on a platter and enjoy. 

Chicken Wings

INGREDIENTS:
5 lbs chicken wings
bbq sauce
2 tablespoons dark brown sugar
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon powdered ginger
1 teaspoon dark chili powder
1 teaspoon mesquite BBQ powder
1 teaspoon ancho chili powder
1 teaspoon chipotle chili powder
1 teaspoon jalapeno chili powder
1 teaspoon pasilla chili powder

DIRECTIONS:
Mix up all of the dry ingredients in a bowl and rub into the chicken wings. Let sit for 1/2 hour.  Over a medium heat on your grill brown the wings for 10 minutes on each side. Place the wings on a baking sheet. With a brush dab the barbeque sauce on both sides of the wings. Place the wings in a preheated 400 degree oven for 10 minutes. Take out of the oven and dab with barbeque sauce on both sides. Place back in the oven for 10-15 minutes more. Take out of the oven and plate.

 

Flank Steak
Serves 4

INGREDIENTS:
1 flank steak
salt to taste
pepper to taste
barebeque sauce to taste

DIRECTIONS:
Season steak with salt and pepper and let sit for 30 minutes to 1 hour. Over a high heat grill for 3-4 minutes on each side. Place the steak on a cutting board with a well and slice against the grain. Serve with barbeque sauce on the side.
