1 loin of lamb (approximately 1 lb)
1 sprig of rosemary
freshly ground pepper
1/2 tablespoon Fairway Extra Virgin Olive Oil
Tie on sprig of rosemary to the loin.
Heat a heavy pan with olive oil. Just before it is smoking place the loin in the pan, fatty side down. Brown well on all sides for approximately 10 minutes.
Heat oven to 425 degrees and roast the loin for 10 minutes. Serve with potatoes and green beans.
