Tickled Pink Cookie Cups from radio and television personality, Lisa G
3 cups flour
2 sticks unsalted butter
1 cup sugar
1 large egg
2 teaspoons vanilla
Cooking/baking spray
Mini-muffin tins
Butter-Cream Icing (see below)
Preheat oven to 350
Cream together butter and sugar until light and fluffy
Add egg and vanilla until well blended
With mixer on low, gradually add flour to the butter mixture until thoroughly blended.
Spray tins with non-stick baking spray.
Make 1-inch round balls of dough. Press in center of dough, so dough reaches
edges of each tin cup. There should be enough of an indentation, so it looks like a cup.
Bake for 12-16 minutes.
Cool. Remove from tins. Makes about 3 dozen cookie cups
Butter-cream Icing
1 box powdered sugar
2 sticks softened butter
20-drops red food coloring
Blend in mixer until tickled pink! Fill cookie cups!
