    FOOD FOR THOUGHT: If you’re wondering how to graduate from Twittering about your last taco to becoming a be-toqued bigshot like “Top Chef” star Tom Colicchio or choco-magnate Jacques Torres, head to the 92nd Street Y. They and others sit down with French Culinary Institute founder Dorothy Hamilton for a special food-career panel/Q&A called Doing What You Love (sounds a lot like the title of Hamilton’s book, “Love What You Do,” which she’ll be signing at the event). 8PM.

    VAG AGAINST THE MACHINE: Sarah Silverman – who’s raised the earnest discussion of genitalia and bodily emissions to a comedic art form of sorts – comes to the Soho Apple Store to present and talk about the new season of her Comedy Central show “The Sarah Silverman Program.” Case in point, the first episode, premiering Thursday, February 4 at 10:30PM, is called “The Baby Penis in Your Mind” (watch a preview here). 7PM.

    PARTYMAN: In 1989, Tim Burton didn’t need a whole lot of fancy CGI to bring his wackadoo vision of Gotham to life – he had Jack Nicholson with a crazy painted rictus and Prince twiddling the soundtrack knobs. Relive the movie that more or less birthed the whole “summer blockbuster” concept at MoMA, when “Batman” screens as part of their Tim Burton exhibition, at 8PM.
