Fairway's Sirloin with Chimichurri Sauce & Potato Salad

Celebrity chef Curtis Stone joins Sara and the Fairway guys to cook a juicy steak.

Fairway's Sirloin with Chimichurri Sauce & Potato Salad
Serves 4

3 lbs Prime Sirloin Steak (about 2 inches thick)
4 tablespoons Fairway chimichurri sauce
2 sprigs thyme
1 clove garlic, peeled and cut in half
1 tablespoon olive oil

Cooking Instructions
Rub meat with garlic, thyme and olive oil. Let sit for a minimum of
2-3 hours.

Heat a heavy pan and place sirloin steak in pan. Let sit and do not touch for 3-4 minutes. Turn the steak over and place in a 450 degree oven for 5 minutes. Plate and slice across the grain. Serve with chimichurri sauce on the side.

Ligurian Potato Salad
Serves 4

1 pounds small white potatoes
1/8 pound french green beans, rough cut
1/2 cup basil leaves, rough cut 1
1/2 clove garlic, smashed
1/8 cup pignoli nuts, toasted
1/2 cup olive oil
salt to taste
pepper to taste

Cooking Instructions

Boil potatoes in salted water--the potatoes must be 110% cooked. When they are just about done, put them into a large bowl and crush lightly. Add olive oil, garlic, nuts, salt and pepper to hot potatoes. Let sit for 20 minutes, then add green beans and basil. Serve when ready
