Sara cooks up chili with Dan and Mitchel of Fairway for Super Bowl Sunday.
Ingredients
2 lbs lean ground beef
2 28 oz cans plum tomatoes, crushed
2 bunches cilantro, chopped
2 green bell peppers, chopped
1 red bell pepper, chopped
1 spanish onion, finely minced
1 can red kidney beans
1 dollop sour cream
1 tablespoon corn oil
1/2 tablespoon paprika
1/2 tablespoon smoked paprika
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1/2 tablespoon smoked jalapeno powder
salt to taste
pepper to taste
Cooking Instructions
In a pot put 1 tablespoon corn oil. Saute the onions over a low heat for 20 minutes until they become soft but do not brown. Add bell peppers. Cook for 5 minutes. Add beef and brown for 10-15 minutes. When the meat is fully cooked ladle off any excess fat and add tomatoes, spices and salt and pepper. Cook for 1 hour stirring occasionally and tasting for seasoning. Take a can of cooked red kidney beans and mix them in. Cook for 10 minutes. Serve in a hot bowl with a dollop of sour cream in the middle and a good amount of chopped cilantro.
