Friday Cocktails

Clover Club Cocktail
1 1/2 ounces Gin
1/2 ounce Dry Vermouth
1/2 ounce Raspberry syrup
1/2 ounce lemon juice
1/4 ounce egg white
Shake without ice to emulsify the egg white, then shake with ice
Fine strain into a cocktail glass
Garnish: Raspberries
Old World Punch
Peels of 4 lemons
1 cup demerara sugar
4 tea bags, One quart Earl Grey Tea
1 cup fresh squeezed lemon juice
2 ½ cups Hennessy Cognac
1 ½ cups Gosslings dark rum
whole nutmeg to grind on top for garnish
In a large punch bowl, peel the skin of 4 lemons.  Add a small amount of superfine sugar and muddle the peel with the sugar. 
Add the demerara and tea mixture, cognac, rum and lemon juice to the bowl and stir to mix.  Place large piece of ice in the bowl.  Garnish with Nutmeg and serve

New Age Tropical
South Side Dizz
Muddle mint in 1 oz simple syrup
3/4 c lime juice
2 oz hendricks gin
Shake and strain into a highball glass
Top with a splash of soda
Garnish with mint

Maria Sin Sangre
Muddle 6 Cherry tomatoes and 6 basil leaves in 1/2 ounce simple syrup
1/2 ounce Lemon juice
1/2 ounce Dry Sack
2 Ounces Silver Tequila
Pinch salt and pepper
Shake and fine strain into a coupe glass
Garnish: Cherry tomato and Basil leaf
