Fairway's New York Prime Dry Aged Strip Loin

Sara and the Fairway guys make a delicious holiday roast.

Serves 6-8 people

1/2 New York prime dry aged strip loin
salt to taste
pepper to taste

Horseradish Sauce
1 cup sour cream
2 tablespoons horseradish with all liquid squeezed out
1 splash tabasco sauce
1 tablespoon dijon mustard
1 tablespoon chives

Mix all ingredients together.

Rub salt and pepper on the strip loin. Preheat your oven to 450 degrees. Place the strip loin on a baking sheet and roast on the center rack of your oven for 30 minutes. Lower to 375 degrees and roast for 20-25 minutes. Take out of your oven for 15-20 minutes. Slice and serve with horseradish sauce.
