Fairway Market's Latkes
4 large Idaho potatoes, peeled and grated
2 eggs
3 Tbsp matzo meal
Salt, pepper
1/2 grated onion
2 cups canola oil
Combine the first five ingredients.
Coat the pan with canola oil. Then, fry small cakes until golden brown.
To garnish:
1/2 lb smoked salmon
4 Tbsp creme fraise
Chives
Apple sauce
Sour cream
