Ingredients
12 sweet sausages
12 spicy sausages
24 red cherry peppers, halved with the seeds taken out
12 green jalepenos, halved with the seeds taken out
12 red jalepenos, halved with the seeds taken out
12 serrano peppers, split in half length-wise with the seeds taken out
6 poblano peppers, quartered with the seeds taken out
2 red bell peppers, cut in eighths with the seeds taken out
2 green bell peppers, cut in eighths with the seeds taken out
12 cloves garlic, crushed in skin
4 spanish onions, quartered
1/4 cup olive oil
salt to taste
pepper to taste

Cooking Instructions
Preheat your oven to 450 degrees. In a large bowl, mix the sausage, peppers, onions, and garlic and add olive oil, salt and pepper. Place the sausage in a large baking pan and let roast for 15-20 minutes. Take the pan out of the oven, toss the sausage around the pan and add the peppers, onions and garlic on the pan and roast for 20-25 minutes more. Take out of the oven, cut the sausages on and angle into quarters and serve.
