For this recipe, they used Roussillon wines, which come from a unique micro-climate in France. Sweet fortified wine from Roussillon — sweet, aromatic and versatile — is perfect for mixing drinks. Fortified sweet wines are a great alternative because of the way they are produced. They contain residual sugars from the grapes used to make them, thus bartenders don’t have to add sugar or syrups.
