Plywood: Bourbon Rising, Raij Back to Tapas in Chelsea

Some major and not so major plywood news coming from TONY's Feed Blog:

· Alexandra Raij, one time partner and chef behind tapas joints Tia Pol and Quinto Pino, has finally revealed what her next project will be (her last stint involved consulting on the new Jet Blue Terminal 5): "Later this fall, Raij will open Txkito (that’s chee-kee-to), a Basque pintxos bar with her husband...The 34-seat restaurant takes its name from the Euskera term for a short pour of wine—here you’ll be mining an all-Basque list along with shareable plates like bacalao pil pil, a cod dish sauced with its own emulsified liquids..." The address here: 240 Ninth Ave between 24th and 25th Street, meaning it will be a direct competitor with her former restaurants just blocks away.

· The second piece of intel: the team behind Smoke Joint has converted the adjacent market and cafe, Little Piggy (Market), into an oh so now bourbon bar. "The kitchen has been removed to make way for a small, rustic bar, at which patrons can peruse a well-curated selection of 28 bourbons. During the day, you’ll find café offerings; at night, mine the full menu from Smoke Joint’s adjacent kitchen."
