Grilled Beef from Top Chef's Kevin Gillespie

A fan fave from Top Chef's sixth season, bearded culinary wizard Kevin Gillespie (now executive chef of Atlanta's Woodfire Grill) makes a savory steak that's sure to be a hit in your home.

Grilled Beef with Sherried Onions

1 cup sherry vinegar
1 cup sugar
2 cinnamon sticks
1/2 cup dark raisins
2 Vidalia onions
2 garlic cloves, thinly sliced
3 green onions, thinly sliced
8 oz. rib lifter steak (ask your butcher for this tender, inexpensive cut)
Lettuce leaves
1 cup picked parsley leaves

Heat vinegar, sugar, cinnamon and raisins in a saucepan. Pour over onions, garlic and green onions and allow to marinate for 1 hour. Grill or broil steak to desired degree of doneness (Kevin recommends rare to just under medium rare to prevent the meat from getting tough). Cut steak across the grain in thin slices. Serve with sherried onions, lettuce leaf wraps, garlic, green onions and parsley leaves.
