Grilled Cheese Galore

The Scotto family of New York City restaurant Fresco by Scotto stops by to show us four mouthwatering riffs on the iconic sandwich.

Grilled Ricotta and Parmesan Cheese on Sesame Brioche

Serves 2

1 cup fresh ricotta cheese
½ cup grated sharp Parmesan cheese
2 sesame brioche rolls
4 tablespoons butter
Salt and pepper to taste

Place the ricotta cheese in a bowl, season with salt and pepper. Cut the rolls in half; spread the ricotta cheese, at least ½-inch thick, on the bottom of each roll. Sprinkle generously with parmesan cheese.

Melt 2 tablespoons of the butter in an ovenproof pan. When melted, add the rolls. With a spatula, gently press down rolls once or twice. When one side is golden brown, add the remaining butter to the pan. Place pan in a preheated oven at 350°F for 5 minutes until the cheese is gooey and melted. Serve immediately.


Crunchy Grilled American Cheese On Pullman Bread

Serves 2

8 slices American cheese
4 slices country white or Pullman bread
4 tablespoons butter
1 cup Scotto secret ingredient (hint: it tastes like bread crumbs)

Place the cheese between the slices of bread. Gently dredge both sides of the sandwiches in Scotto secret ingredient. Melt 2 tablespoons of the butter in a skillet and when melted add the sandwiches. Gently press down with a spatula once or twice. When one side is golden, add the remaining 2 tablespoons of butter, turn the sandwiches over, and brown. Serve immediately.


Grilled Swiss Cheese and Turkey Burger on Rye with Sautéed Onions and Mustard 

Serves 2

2 medium size onions, sliced thin
10 ounces ground turkey
Salt and pepper
1 tablespoon mustard
4 slices rye bread
8 slices Swiss cheese
4 tablespoons butter

Saute onions in two tablespoons of olive oil in a pan until onions are translucent. Season ground turkey with ½ teaspoon salt and ¼ teaspoon freshly ground black pepper. Shape turkey into two patties and cook over medium heat in the onion-filled pan until well browned.

Spread mustard on the rye bread slices. On two slices of bread, layer 2 slices of Swiss cheese, a turkey burger, 2 more slices of Swiss, half of the sautéed onions, and top with the remaining 2 slices. Melt 2 tablespoons of the butter in a skillet or grill; when melted add the sandwiches. Gently press down with a spatula once or twice. When one side is golden, add the remaining 2 tablespoons of butter, turn the sandwiches over, and brown. Serve immediately.

Melted Brie and Ham on Black Bread with Arugula, Thinly Sliced Apple, and Honey Mustard 

Serves 2

4 slices black bread
1 tablespoon honey mustard
8 slices brie
4 slices honey ham
1 green apple, core removed, and thinly sliced 
4 tablespoons butter
1 cup baby arugula

Spread half of the honey mustard on two slices of bread, then top with brie, ham, apple slices, and baby arugula. Spread the rest of the honey mustard on the remaining two slices of bread and enclose the sandwiches. Melt 2 tablespoons of the butter in a skillet or grill and when melted add the sandwiches. Gently press down with a spatula once or twice during the grilling. When one side is golden, add the remaining 2 tablespoons of butter, turn the sandwiches over, and brown. Serve immediately.
