Croque Monsieur from Fairway Market


2 slices white bread
2 slices ham
3 slices gruyere cheese.
Bechemel sauce

Make a traditional ham and cheese sandwich.  Brown the sandwich on both sides.  Spread the béchamel on the top side only (don’t skimp) place in upper rack in a 400 degree oven until brown and bubbly.
Mustard and cornichons are a must.  So is a beer.
 
Bechamel sauce
1qt milk
6 tbl butter
6 tbl flour
Salt/pepper
½ sm onion
Nutmeg
 
Melt butter in a heavy pan, add flour cook over LOW heat for 20 min, remove pan from the flame, add milk and wisk.  Return to a medium flame and continue to wisk, bring to a boil, let boil for 2 min then reduce heat, continue to cook for another 15 min strain season with salt pepper, nutmeg.
