Scarpetta, One Group, Blue Ribbon Headed to Vegas

While Charlie Trotter and Daniel Boulud recently closed their restaurants in Las Vegas, new projects at the forthcoming mega-hotel The Cosmopolitan suggest that Vegas dining options won't revert back to all-you-can-eat buffets anytime soon. Slated to open later this year, The Cosmopolitan will feature restaurants that rely heavily on recognizable New York names, including Blue Ribbon

Scott Conant will open his third Scarpetta (New York and Miami each have one and other is in development in Toronto), The One Group represents the trendy steakhouse STK, restaurateur Costas Spiliadis will open a branch of Milos and Avenue's Jason Strauss and Noah Tepperberg are in talks to open a rooftop nightclub. While many of these seem like givens for a Vegas expansion, the news that Bruce and Eric Bromberg will bring Blue Ribbon Sushi to the hotel comes as a bit of a surprise. While the pair have established a mini-empire of restaurants in New York, in Manhattan and Brooklyn, over the past eighteen years, they've yet to expand beyond that. [Las Vegas Sun]
