Check out this “note from the chef,” Emma Hearst, that came with our bill during a recent visit to Sorella. Yes, the bartender did have a pretty big Adam’s apple. Incidentally, Hearst wasn’t kidding when she described her chicken-liver mousse, fried egg, pancetta, and duck-fat English muffin as “the most decadent chicken-liver dish in the city.” Expect to see it on next year’s "top 100" lists. Unless of course Gothamist’s informal poll of female chefs (including Hearst) holds true and we see more vegetarianism and healthy eating.
