Scott Bryan Takes Over at Apiary

Apiary, which garnered a lone star from Platt under chef Neil Manacle, tells us it has turned executive-chef duties over to the esteemed Scott Bryan. The former Veritas chef is currently retooling the kitchen and will have a new menu within a month: “Chef Bryan, recognized in the industry as a venerable talent was a Food & Wine Best New Chef (1996) and earned three stars from The New York Times for his work at Veritas. The list of kitchens in which Chef Bryan has worked includes greats such as Gotham Bar & Grill, Bouley, Le Bernardin, and Lespinasse. In addition to his experience in the kitchen, Bryan has also played the role of partner at Indigo and Veritas.” Of course, it remains to be seen how long Bryan will actually stay onboard — he bailed out of 10 Downing early in the game, and last we checked in with him, he was leaving Lever House (just a week after taking the head toque gig there) to pursue a project in D.C. Hopefully he’ll do well in the East Village.
