It's Official: Per Se Is Latest to End Tasting-Menu Tyranny

The moment has come. Starting Wednesday, as expected, Per Se will offer an à la carte “salon menu” during dinner in its 24-seat walk-in lounge. According to Diner’s Journal, options (priced from $24 to $46 and between the size of an appetizer and an entrée) will change nightly and will sometimes overlap with the tasting menu and sometimes not. Thomas Keller says he made the change partly because private dining is down at the restaurant: “It’s our responsibility to try to keep the opportunity open to a lot of guests who unfortunately can’t come to Per Se because of the situation.”
