At 5 p.m. last night, the wait at Momofuku Noodle Bar was about an hour, per Midtown Lunch, but when we rolled in at around 10:45 p.m., we were seated pretty much immediately. Fergus Henderson groupies were wise to show up on the early side — by the time we pulled up a stool, the kitchen was out of deep-fried lambs' brains, pigs' tails, roasted bone marrow, and the dish we were really craving: snail, trotter, sausage, and chickpea. We happily made do with grilled chitterlings (amazing — skewered and brushed with a mustard sauce) and a warm pig’s head and bean salad (more of a soup). Unsated, we went ahead and plunked down $41 for the deep-fried Hudson Valley rabbit. It was a succulent, incredibly generous portion — indeed, Gothamist saw it being shared between tables at the Spotted Pig. The only other thing on the menu at that point (a little after 11 p.m., when Henderson clocked out) was the unexciting-looking boiled knollcrest egg on a bed of celeriac. Despite the heartburn, we’re kind of regretting we didn’t go for that too. Anyway, next year.
