Dovetail's Fraser Pitches Central Park Cart and Café

Dovetail chef John Fraser has submitted a bid to open a gourmet food cart called Greenscart and a café named Greensward, both in Central Park, Eater reports. Food for the cart would be prepared at the café, Fraser said in his bid. The cart “would serve a scaled down and more accessible version of Dovetail’s locavore fare, along with local wines and three kegs of local beer. Imagined menu items so far include heirloom tomato salads, hand-cut muffelatta, handmade duck sausage on ciabatta, gelatos and picnic baskets with Champagne, sandwiches, cheese, and salads.” What, no sherry? For the café, expect anything from a pig-head pizzetta to a big escarole salad with fried risotto, but nothing over $16. The names could be better — Fraser Fast Food? Central Cart? There have to be better options — but having seen how Fraser adapts his high-end food during the restaurant’s sizable, bargain Sunday suppers, we would be thrilled to see the projects under his tutelage.
