Baca, no longer in the kitchen.
The Rusty Knot’s manager, Skyler Spohn, now confirms that Joaquin Baca (shown here) has been out of the picture for about five months. Apparently Baca had plans to start something of his own (whether that was Wilfie & Nell is uncertain). In any case, the new chef is Tony Citino, formerly of Brown. Those mini po boys are his, as well as the turkey pilgrim (which will be replaced on the menu with an as-yet-to-be-named dish sometime in the New Year) and the pulled-pork sandwich. As for our beloved liver-and-bacon sandwich, it’s said to have made a brief encore (due to popular demand) after it was originally yanked from the menu — so maybe, just maybe there’s hope that it’ll come back again. Also new at the Knot: a 5 p.m. to 7 p.m. weekday happy hour, and winter hours of 5 p.m. till 4 a.m. on weekdays and noon till 4 a.m. on weekends. And there may soon be D.J.’s every Monday.
