Claude Spotted at Patisserie

Though Patisserie Claude reopened in December sans Claude, Robin Raisfeld and Rob Patronite saw the chef there earlier this week. We spoke to Pablo Valdez Jr., whose father, a longtime assistant, took over the business. Claude trained Valdez Sr. in French pastry 23 years ago, so the recipes have not changed. Though Claude stops in regularly, he’s not back to make the croissants. “Clientele’s increased,” Valdez Jr. added. “Claude was known for fighting with the customers.”
