Jonathan Benno of Per Se would seem to agree with Tom “Keep it Simple” Colicchio. His least favorite food trend, per a BlackBook Q&A, is “the use of chemicals in cuisine. There’s this whole molecular gastronomy movement. I object to the manipulation of food that’s been developing over the past couple of years.” Benno definitely kept it old-school the other night — the Feedbag has an inside-the-kitchen look at Per Se’s $575-per-head Zagat Vintage Dinner meal.
