Perilla Revamps Menu for Spring

Shortly after I Trulli's Patti Jackson told us that wild striped bass is a sure sign of glorious spring, Perilla shared a revamped menu. Sure enough, the original Top Chef winner (and one of the most classically successful ever since) Harold Dieterle also spotlights the fish this season, prepared with guanciale, tomato confit, white beans & Sicilian green olive sauce.
