Timing Is Key: Green Apple Opens, Serving Watermelon Gelato

Chalk it up to this infernal heat, but last night we sniffed out a gelato store on the day it quietly soft-opened (full opening tonight).

A trio of brothers (Alex, Leon, and Andy Zang), one of whom used to be a sushi chef and another of whom worked the pastry station at Blue Fin (where he learned to make ice cream), have opened Green Apple in Nolita.

The Zangs grew up in Chinatown, and though they like Chinatown Ice Cream Factory, their aim was to open something “less for tourists, and more for locals just walking by.”

To that end, they’re turning local fruit into gelato, made fresh every day. Green tea is the only one made from powder (using matcha, sugar, and milk), and taro and litchi will follow, but for now the flavors are watermelon, pistachio, green tea, yogurt, vanilla, strawberry, chocolate hazelnut, and blueberry. Sorbets include mango and pineapple.

The best part for night owls: The store plans to open from noon till midnight — and till 1 a.m. on weekends.
