Benoit Welcomes September With Figs and Cream

In this week's New Releases, Alain Ducasse's Benoit introduces a fig tart for dessert and takeaway starting today.

Pastry chef Youssef Aderdour: "For the bottom we have a sweet pie dough, and then you have fig jam and around the top a raspberry jam to add some acidity. The white thing is a vanilla chiboust, which is vanilla pastry cream with Italian meringue. Around it we have fresh fig, and some caramelized sugar on top.

Because it’s the season of the fig, we were thinking to make something that shows off the flavor. Vanilla cream doesn’t kill the taste. We'll have it today through September as our monthly tart. You can order it two hours in advance [$20, serves 6-8] and eat it at the restaurant as part of of the prix-fixe."

Look for a pear dessert next month.
