Fairway Market's Cheese Puffs

Yields 25-30 Cheese Puffs

3 tablespoons butter
1 cup flour
3 eggs
1 cup gruyere cheese
1/2 teaspoon baking powder
1 1/2 teaspoon salt
1 pinch cayenne pepper

Bring water, salt and butter to a boil. Add flour and mix with a wooden spoon. Lower the heat to medium and when the dough begins to pull away from the sides of the pot remove it form the pot and place into a food processor. Mix on low to let cool. After it is cool add the baking powder and mix. Add the eggs one at a time until each one is mixed in. With a tablespoon make rounds of dough and place them on a baking sheet lined with parchment paper. Bake at 400 degrees for 15 minutes then lower to 350 degrees and bake for another 5 minutes. Plate and serve.
