Blackened Red Snapper Tacos from Sara Gore

Tortillas
Snapper:
Ground Coriander
Cayenne
Ancho Chili powder
Salt and pepper
Coriander Slaw:
Red and white cabbage (shaved)
Red onion shaved
Lime vinagrette
Shallots
Lime juice
Olive oil
Rice vinegar
Salt and sugar (or splenda)
Coriander seeds
Sour cream:
Fat free or lowfat sour cream (or Greek yogurt – it adds protein)
Lime juice
Cilantro
Salsa fresco
Tomatoes
Onion
Garlic
Cilantro
Jalapeno
Assemble
Sear snapper
Toast tortilla
Layer middle of tortilla with slaw
Add sliced avocado
Place fish on top
Top with salsa, sour cream and chopped scallions
