Fairway Market's Grilled Cornish Game Hen

Fairway Market's Grilled Cornish Game Hen

1 Cornish game hen, butterflied
1/4 cup extra virgin olive oil
1 clove garlic, crushed
2 Thai chili peppers, crushed
Juice of 2 limes
Zest of 1 lime
Salt and pepper to taste
3 sprigs cilantro to garnish

Mix the olive oil, garlic, chili peppers, lime juice, lime zest and salt and pepper together for the marinade. Marinate the cornish game hen for at least 24 hours up to 48 hours. 

If you're grilling outdoors, place the hen skin side down in the middle of the grill for 10-15 minutes over medium heat. Flip the hen over, placing it on the side of the grill. Grill for 10-15 minutes more. Place the hen on a serving plate and garnish with cilantro.

If you're cooking the hen indoors, heat a heavy pan with a few tablespoons of olive oil. When it is at medium heat, place the hen skin side down and grill for 15 minutes. Meanwhile preheat an oven to 475 degrees. Flip the hen over and place the pan in the warm oven for 10 more minutes. Place the hen on a serving plate and garnish with cilantro.
