Springtime Strawberries Jubilee, from Chef Ryan Scott, owner of RyanSccott2Go catering
Yield:
4-5 servings
Ingredients:
2 cups fresh strawberries
Zest of 1 Orange
14 cup Water
1/4 cup Sugar
2 tablespoons Cornstarch
1/4cup Brandy
Vanilla Bean Ice Cream
Crumbled Amaretto Cookies
Procedure:
1. In a saucepan, cook cherries and orange zest in water for 10 minutes. Mix together the sugar and cornstarch; add to cherries. Cook cherry mixture until thickened. Carefully add Brandy to mixture and ignite until alcohol cooks off.
2. Spoon ice cream into goblets and spoon heated cherries over ice cream; top with crumbled Amaretto cookies.
