Frittatas Made Fancy

Chef Marc Meyer of CookShop fame, visits the LX New York kitchen to make his rendition of the classic frittata.
Marc Meyer's Frittata's
3 large eggs
Salt and pepper
2 tbsp olive oil
1- preheat the broiler and set broiler pan about 3-4 inches from broiling element
2- beat the eggs with salt and pepper to taste. Heat oil in 7-inch ovenproof skillet over high heat at, when it slides easily from side to side, add the eggs. Immediately turn the head town to low. Let the eggs cook undisturbed until set on the bottom, the use a heatproof spatula or wooden spoon to pull the eggs away from the rim of the pan and let the loose eggs run underneath.
3- sprinkle any additional toppings over the frittata, and flash the frittata under the broiler to set its surface - a minute at most.
Serve hot or warm
