Fairway Market's Butterflied Leg of Lamb

1 leg of lamb, butterflied and fatty side scored
1/4 cup Fairway Extra Virgin Olive Oil
Juice of 2 whole lemons
Zest of 1 lemon
1/2 teaspoon dried thyme
2-3 boiled potatoes per person, halved
tips of 2 bunches of asparagus
1 fennel bulb, sliced
1 bunch of carrots, quartered
salt and pepper to taste

Mix olive oil, lemon juice, lemon zest and thyme with salt and pepper and score the fatty side of the lamb.  Rub the marinade into the leg of lamb and let sit in the refrigerator for 24 to 48 hours.

Inside Method
Heat a pan large enough to hold the leg of lamb until hot.  Lay the leg down fatty side first, add vegetables and let cook for 5 minutes over medium heat.  Turn onto the other side and cook for another 5 minutes.  Place in a preheated 450 degree oven and cook on the middle rack for 15 minutes for medium rare.  Remove and let sit for 15 minutes.  Slice the leg of lamb into thin slices and place on warm plates.  Serve with any vegetable and potato dishes. 

Outside method
Heat grill to medium, cook on both sides until done, approximately 20-25 minutes, let rest and serve.

Mint and Yogurt Sauce
1 cup Greek style yogurt
3 sprigs mint leaves, coarsely chopped
3 sprigs Italian parsley, coarselychopped
salt and pepper to taste

Mix all ingredients together.
