With New York City's Scarpetta restaurant now legitimized and packed by a glowing three star New York Times review, chef Scott Conant is taking the show to Miami, where Scarpetta at Fontainebleau is slated to open on Nov. 21. In New York, the Meatpacking District Italian is a mix of dark wood and warm light. At Fontainebleau, Scarpetta is light and airy and boasts columns 'reminiscent of a coral or weather-worn driftwood,' per the official word. Throw in some ocean and sweet Fontainbleau poolside views and you really can't fault Conant for hopping on the Miami train. On the menu, look for Conant signatures, such as mushroom polenta and his world-class spaghetti with tomato and basil.
