After opening for business last Thursday and taking the last two days off to recuperate from exhaustion, Sara Jenkins is back in the kitchen today at Porsena, her pasta joint that joins all-pig-all-the-time favorite Porchetta in her piecemeal culinary colonization of the East Village.
So what’s playing in the kitchen, as Sara and crew turn out orrechiette with spicy lamb sausage, cannolichie "con una marea di formaggi" (little twists with a tide of cheeses) and short ribs braised in red wine**?
“We’re playing all reggae in the kitchen, basically. I’m not a super music geek but Matt [Lindemulder, Jenkins’ cousin and Porchetta partner] is a music fiend. I just steal all my stuff from him.
Right now I’m liking Prince Far I a lot—especially his song Bedward—and also Freddie McGregor, and this album series called Strictly Riddim: Dancehall Reggae—everything on there is great. And I really love Anthony B. He has a song called Cold Feet, and I used to think he was singing confit. Oh well.”
